I apologize in advance if this is already an option (can't find it) but it would be great to re-size board to full screen if at all possible and maybe some sizes in-between.

I agree that it would be useful to be able to change the board dimension.
But until such an option is available, just wanted to let you know that you can zoom the page in the browser in order to make the board appear bigger. Usually the shortcut to zoom the page is Ctrl + and Ctrl -.
Hmm... This mainly hasn't been done as good implementation models are hard to come by. I think that the board that is currently being developed will have the ability to resize. But if not, you've given me some ideas for implementation models.
I coped with that using ctrl++ (or ctrl+ wheelsup on the mouse), under firefox.
