I've always found this an interesting genre to explore.
The survival of man
After the ultimate catastrophe
And the revival of knowledge

One of my favorites is
A Canticle for Leibowitz
Walter M Miller ,Jr
I will give "A Canticle for Leibowitz" a go. Found it in the Internet Archive.
Have you read "Check and checkmate" by the same author? Well, I think it's the same author. Walter M Miller. Available at Project Gutenberg.

Only reference I find is in the IMBD, George A Romero, is that it?

Though I prefer "pure Post apocalyptic" above "Post Zombi apocalyptic", like westerns, zombi's also do have some hidden jewels :)

Blade Runner, it's a classic and my favorite

one of my favourites with a theme close to OP's "A Canticle for Leibowitz" as far as I can tell - only just started it.

Book of Eli is a good read. Also a movie.
Haven't read check and checkmate .
The Postman is another good one.
There is a lot of good video games based on post apocylptic survival.

Such as fallout, last of us, and days gone.
Loved last of us (the series), the postman was epic, and then of course there was Mad Max :)

Some books I've heard of but haven't found yet:
"The Road" - Cormac McCarthy,
"Station Eleven" - Emily St. John Mandel,
"The Stand" - Stephen King
"Oryx and Crake" - Margaret Atwood.

The Stand was good but man it was long 1153 pages. They made it into a miniseries. I've got it on VHS (of all things,lol) and it's 3 tapes over 6 hours in all ,366 min.
